French onion soup:
50g (1.5 oz) unsalted butter
2 tbsp vegetable oil
6 onions, finely sliced
1 cup Chinese Shaoxing wine
2 tbsp Chinkiang vinegar
2 tbsp Chinese light soy sauce
1 cinnamon stick
3 bay leaves
3 whole star anise
5 cups beef stock
