Meatballs
250g (9 oz) beef mince
100g (3.5 oz) pork mince
¼ cup panko breadcrumbs
1 tbsp milk
50g (1.5 oz) ricotta
1 egg
1 garlic clove, finely grated
¼ cup finely grated parmesan cheese, plus extra to serve
½ tsp fennel seeds
¼ tsp freshly grated nutmeg
1 tsp sea salt
Miso tomato sauce:
2 tbsp extra virgin olive oil
2 garlic cloves, sliced
1 bay leaf
1 whole star anise
1 dried red chilli
1 x 400g (14 oz) can whole peeled tomatoes
1 tbsp tomato paste
1 tbsp shiro miso paste
1 tbsp soy sauce
1 tbsp finely chopped parsley, plus extra to serve
