Oven-baked Crispy Chicken Nuggets

Get set to enter a dipping dreamland with my recipe for crispy, crunchy chicken nuggets… and there’s no deep-frying involved! Yep, these baked bad boys are nugget goals. Make them kid-friendly by leaving out the chilli flakes and vodka (yes, you read that right!), then dive right in.

Oven-baked Crispy Chicken Nuggets

Ingredients

400g (14 oz) chicken breast, cut into 3cm (1 inch) cubes

1 tsp garlic powder

1 tsp smoked paprika

1 tsp chilli powder (use more or less to taste)

2 tsp sea salt (use 1 tsp if using fine salt)

3 tbsp vodka

100g (3.5 oz) plain salted potato crisps

2 cups panko breadcrumbs

1 cup plain flour

3 eggs

 

Dipping sauce:

¼ cup Japanese tonkatsu sauce*

3 tbsp Marion’s Kitchen Sweet Chili Sauce or any sweet chili you like

Steps
  • Step 1

    Preheat the oven to 180°C/360°F.

  • Step 2

    In a large bowl combine the chicken, garlic powder, smoked paprika, chilli powder, salt and vodka. Allow to marinate for 10 minutes or overnight.

  • Step 3

    Place the potato crisps and breadcrumbs in a food process and pulse to form coarse crumbs. Pour out into a large bowl or tray. Place the flour in a separate large tray. Crack the eggs into another bowl and whisk until well combined.

  • Step 4

    Line a baking tray with baking paper.

  • Step 5

    Dip each piece of chicken into the flour, then egg and then the crumbs. Place the crumbed chicken pieces onto the lined baking tray. Bake for 20 minutes. Remove from oven and turn the pieces over. Bake for a further 15 minutes or until golden and the chicken is cooked through.

  • Step 6

    In the meantime, make the dipping sauce by mixing the ingredients together.

  • Step 7

    Serve nuggets warm with the dipping sauce.

    Notes:

    – Japanese tonkatsu sauce is a type of dipping sauce similar in flavour to barbecue sauce. Use your favourite barbecue sauce instead if unavailable.

How long do you cook nuggets in the oven?

Chicken nuggets, they’re one of those chicken recipes that is just good, every single time…but how long do you have to cook your nuggets for to get the best results?

It all depends on how big your chicken pieces are! If you’re making your baked chicken nuggets from scratch you definitely want to make sure you’re cooking them long enough to have the chicken COMPLETELY cooked through. We normally go for around 35 minutes, first baking for 20 minutes, then flipping the nuggs and baking for another 15 minutes to get that crispy, crunchy, golden brown colour on ALL sides!

Can I fry these chicken nuggets?

The beauty of these chicken nuggets is that they are baked! If you are looking for a more deep fried vibe, we’d suggest our Coconut Sweet Chilli Chicken Tenders, which are DELICIOUS and also shallow fried. Or if you’re wanting to give that air-fryer a workout the Marion’s Best Air Fryer Chicken Nuggets are a great shout!

Can I use traditional bread crumbs?

Whilst in theory, you COULD replace the panko breadcrumbs with traditional breadcrumbs, these baked chicken nuggets won’t be anywhere near as crunchy! The panko/potato chip crumb really levels up these baked chicken nuggets and traditional bread crumbs just won’t do as good of a job, unfortunately.

It’s worth the supermarket run! Promise!

Very tasty!

Thank you for this recipe! So simple and easy to follow. Tried it just now, and my kids love it so much. I omitted the chili and vodka and they still turned out soooo delicious, even the adults approved!
