I can’t get enough of these marinated prawn skewers – they’re perfectly juicy, beautifully marinated and so tasty! You could also try these on the barbecue for some chargrilled goodness. If so, try soaking your bamboo skewers in some water beforehand to prevent them burning.

Use a mortar and pestle to pound the garlic, coriander, white peppercorns and salt. Transfer to a large bowl. Add the prawns, fish sauce and sugar. Mix until well combined.
Thread the prawns onto skewers. Heat the oil in a large frying pan over medium-high heat. Cook the skewers in batches for 2-3 minutes each side or until the prawns are cooked through.
Serve with the Coconut Sweet Chilli Sauce.
