300g (10.5 oz) steak*, thinly sliced on the diagonal against the grain
2 garlic cloves, finely chopped
2 tsp fish sauce
sea salt
freshly ground black pepper
1 tbsp vegetable oil
1 red onion, sliced
1 tsp cornflour (cornstarch), mixed with 1 tbsp water
2 spring onions (scallions), finely sliced
steamed rice, to serve
finely sliced iceberg lettuce, to serve
1 cucumber, deseeded, julienned, to serve
1 tomato, cut into wedges, to serve
fresh coriander (cilantro) or mint leaves, to serve (optional)
1 lime wedge
Stir-fry sauce:
3 tbsp oyster sauce
2 tbsp white vinegar
1 tbsp fish sauce
1 tsp dark soy sauce
1 tsp sugar
