Steamed Egg Custard & Spicy Pork

For the steamed egg, whisk the soy milk, eggs and soy sauce in a large bowl until combined. Pour the egg mixture into a shallow serving bowl (leave yourself about 2 centimetres leeway for the egg to expand as it cooks). Place the bowl in a bamboo steamer over a wok or pan of boiling water and steam for 10 minutes or until the egg is just set. Turn the heat off but keep warm by leaving the egg in the steamer while you make your pork.

Step 2

Heat the vegetable oil in a wok or frying pan over medium-high heat. Add the garlic, chilli and ginger. Stir-fry for half a minute until it’s smelling lovely. Next, add the pork and stir-fry for a couple of minutes until the pork is just cooked.

Step 3

Add the doubanjiang chilli bean paste and the Sichuan peppercorns, then stir-fry for another half a minute to release all those wonderful flavours and aromas. Stir through the soy sauce, oyster sauce, Shaoxing wine, sugar and chicken stock. Simmer for 4-5 minutes or until the sauce has thickened slightly. Turn the heat off and toss through spring onion.

Step 4

Top the steamed egg custard with the spicy pork and drizzle with chilli oil, if using. Serve warm.

Doubanjiang is a Chinese fermented broad bean and chilli paste. It can be found at an Asian grocer or ordered online.

Place a wok or frying pan over medium-high heat. Add the chilli crisp and, once it’s sizzling, add the spinach. Stir-fry for a minute or until it’s just wilted. Crack in the eggs. Turn the heat down to low and cook until the whites have just set and the yolks are runny (or until cooked to your liking).

Step 2

Sprinkle the eggs with grated cheese and the sesame seeds. Allow the cheese to melt for a minute or so, then slide out the whole egg structure on to plate. Sprinkle over the spring onion.

Step 3

Serve with toast or rice… whatever takes your fancy.

One-Pan Pulled Pork Breakfast Skillet

Preheat your oven to 140°C (280°F). Place the pork shoulder in a roasting tin lined with baking paper. Rub the fragrant spice mix from the BBQ Pulled Pork Kit all over your pork. Now scoop out 2 tablespoons of the Sticky Chilli BBQ Sauce and rub that over the pork too (save the rest of the sauce for later). Pour in enough water to reach 2cm up the side of the pork (the extra liquid keeps your pork juicy and creates a sauce at the end). Cover the pork with baking paper and then enclose the entire tin with foil. Slow roast for 3 hours or until fork tender, then remove from oven.

Step 2

Transfer the pork to a large bowl or tray. Use forks to pull the pork apart. Mix through the rest of the BBQ sauce and drizzle over some of the pan juices. Season with salt to taste.

Step 3

Preheat your oven to 200°C (390°F). Cook potato gems on a baking tray for 15 minutes or until golden and crispy. Remove tray from the oven and increase temperature to 220°C (430°F).

Step 4

Arrange 250g (9 oz) of the cooked pulled pork (if you’ve made the pulled pork from scratch, save the rest for other recipes such as our Pulled Pork Roti Wraps  and Leftover Pulled Pork Spring Rolls ) and tater tots evenly in a greased skillet. The pork should be nice and saucy – if you need to loosen things up a little or like things extra saucy, feel free to add some sweet chilli sauce or some Marion’s Kitchen Sticky Chilli Ginger Marinade. Sprinkle over the mozzarella cheese, and mix until roughly combined. Make a small well on one side of the skillet and crack in the egg. Transfer the skillet to the hot oven and cook for 8–10 minutes or until the egg is cooked to your liking.

Step 5

Garnish with red chilli and coriander leaves. Serve warm as is, or with toasted sourdough.

– If the Marion’s Kitchen BBQ Pulled Pork Kit is unavailable where you are, you can use 250g of leftover pulled pork from another recipe of your choosing and skip straight to Step 3.

And, while we love morning eggs as much as the next person (or even a spicy pork stir fry!), sometimes we feel like mixing things up with something a bit more off the beaten track. From muffins that look like they’ve come straight from a Parisian patisserie to a smoothie bowl you’ll want to dive into, these quick and healthy breakfast ideas will make a welcome addition to your morning food rotation.

 

We teamed up with Carman’s Kitchen to create two knockout recipes the whole family will jump out of bed for!

Muesli and granola make a great brekky as they are, but how about using them in a fun, innovative way? We took two of Carman’s most popular products – Raspberry & Coconut Low Sugar Granola and Fruit & Nut Muesli – and set to work. Read on to see how we got on in the kitchen!

Raspberry & Coconut Granola Muffins

Raspberry & Coconut Granola Muffins

Step 1

To make the raspberry filling, add raspberries and maple syrup to a small saucepan and place over a low heat. Bring to a gentle simmer, then lightly crush the raspberries and remove pan from the heat. Set aside to cool.

Step 2

Preheat the oven to 170°C (340°F). Meanwhile, line a 6-hole muffin pan with rounds of baking paper.

Step 3

To make the muffins, mix together the granola, flour and baking powder in a large mixing bowl. In a separate bowl, mix together the wet ingredients, so the yoghurt, coconut milk, butter, eggs, maple syrup and vanilla paste, along with half a cup of water. Next, add the wet ingredients to the dry ingredients, along with the lemon zest. Mix until well combined. Divide batter evenly among lined muffin holes.

Step 4

Transfer muffin tray to the oven. Bake for 20 minutes, or until golden brown and a skewer comes out clean when inserted in the centre.

Step 5

Remove tray from the oven and place a chopping board or tray on top of the muffins. Using a tea towel to protect your hands from the warm tray, flip the muffins over so that their tops become the bottoms. Allow to cool in the tin.

Step 6

Once the muffins are cool to the touch, use a small knife to cut out a 3cm (just over 1”) diameter hole in the centre of each muffin without breaking through the whole way. Fill with the raspberry filling.

Step 7

Transfer chocolate pieces to a large microwave-safe bowl. Microwave for 3 minutes or until just melted, then stir until smooth. Spoon a small amount of chocolate on top of filled muffins (or, if you prefer, dollop over thick natural yoghurt instead). Sprinkle with extra granola, if desired, then top with fresh raspberries and serve.
