250g (9 oz) sticky (glutinous) rice
450g (16 oz) pork loin
150g (5 oz) pork back fat
bamboo skewers
Marinade
4 garlic cloves, peeled
3 coriander (cilantro) roots, washed
½ tsp coriander seeds
½ tsp white peppercorns
2 tbsp palm sugar, finely shaved
2 tbsp fish sauce
3 tsp Thai black soy sauce or kecap manis
2 tsp vegetable oil
½ tsp salt
2 tsp cornflour (cornstarch)
¼ cup coconut milk, plus extra for basting
