500g (1 lb) pork mince
⅓ cup Chinese char siu sauce*
2 tbsp vegetable oil
2 spring onions (scallions), white part finely sliced, green parts cut into batons
1 small onion, finely diced
2 garlic cloves, finely chopped
1 small carrot, finely sliced
200g (7 oz) Chinese cabbage (also known as wombok or Napa cabbage), cut into large chunks
400g (14 oz) cooked egg noodles (or any noodle of your choice)
4 crispy fried Asian eggs (optional)
Stir-fry sauce:
2 tbsp oyster sauce
2 tsp white vinegar
1 tsp dark sweet soy sauce
