2 cups jasmine rice
2 spring onions (scallions), trimmed, cut in half
3 slices ginger, skin-on
2 garlic cloves, finely chopped
2½ cups chicken stock
4 chicken drumsticks
4 small skin-on boneless chicken thigh fillets
sambal oelek, to serve
sliced cucumber, to serve
Spring onion sauce:
1 cup finely sliced spring onions (scallions)
1 tsp sea salt
4 tbsp vegetable oil
2 tsp sesame oil

This is a fast and easy version of this dish. The longest part will be making the spring onion sauce, which I was able to do while cooking the rest of the dish in the rice cooker.

This recipe is so easy and quick and yet very healthy and full of flavor. It is very clean tasting. The flavor of the rice and chicken is the bomb! That green onion sauce added a different layer of flavor. Thank you for this recipe.
